   A light sheet iron cylinder about six inches in diameter, open at the top, containing a hemispherical screen on the bottom, and a curved metal scraper that could be moved across the top side of the screen by turning a crank. 
   While not listed in cookbooks as a prime reason for sifting, an important function of the sifter was to screen out weevils, which tended to be found in the flour after it had been stored for a time.

   The main purpose of a flour sifter is to aerate the flour, separating the granules and making it much easier to mix into a batter. Unsifted flour may have lumps that may be difficult to incorporate, causing the baker to over-mix the batter and creating too much gluten.
 
   In addition to preventing over-mixing, sifting flour can aid in the prevention of gluten in other ways. Sifting flour before adding it to liquid ingredients can allow fat to coat the flour more efficiently, reducing the amount of water that comes in contact with each particle. 
   Since water and flour work together to create gluten, this can moderate the amount of gluten formed and the toughness of the final product.

   Most of us rarely think about can openers, let alone clean it as often as we would other kitchen tools. But the truth is that manual can openers can get pretty grimy and, while we’re talking about it, they can get rusty as well. 
   A trip in the dish washer can help, but won’t solve the rust that builds up around gears. Before you replace it, check out this simple tip.
   Simply fill a bowl with white or apple cider vinegar and let the can opener soak from a few hours to a full night, depending on the severity of the rust. 
   Then, take an old toothbrush and scrub away the rust. Next, rinse the vinegar off with water and dish soap. Finally, completely dry the can opener, running the gears over a cloth to get into the small crevices.

   If you watch TV cooking shows, especially set in restaurants, you may have heard references to food being placed in the salamander. You may also have seen plates or other dishes being placed into small oven-like appliances, some of which may look similar to a large toaster oven.
   A salamander, today, is a nickname for a small self-contained broiler unit that is used to finish or brown dishes.

   Salamanders are generally open in front and have racks that easily slide in and out. They can be crisp up the top of dishes, toast sub sandwiches, melt cheese, or even be used for actual broiling duty or slow baking. As well, they may be used to keep dishes warm.

   Sometimes, pizza places that sell by the slice will use a salamander to quickly re-melt the cheese and give you a nice hot slice of pizza. Although a salamander can be used to melt cheese, there is also a specific type of broiler, similar to the salamander, that is meant to be used as a cheese melter.

Tip 1: Remove Everything Removable
   remove all the parts you can and wash them separately. Not only is this more sanitary, it will mean less cleaning in the future if done properly. Trays, racks, and belts may all be removable on your salamander so it really pays to know your machine when cleaning it.
Tip 2: The Garbage Bag Trick
   Once those removable pieces are off, don’t waste time cleaning them in a sink. Simply toss them into a large plastic bag, add some dish soap and a bit of water and let soak overnight. The dried on food will be able to be rinsed away easily in the morning.
Tip 3: Cleaning Stainless Pieces
   There are two ways I’ve found that are really effective for cleaning stainless steel. The first is making a baking soda paste to rub onto it, then let stand overnight and remove. To make your paste, simply add a bit of water to a bowl of baking soda and mix. Then all you have to do is scrub it on, leave until dried and rub off.
   use dish soap and water to bring a stainless to a gleaming shine. Keep your soap concentration quite high here if you want to see the best results.
